Sambar Vada
Ingredients :-
Serving for 4
For Vadas :-
* Urad dal - 2 cups
* Chopped green chili - 2
* Ginger - 1 inch piece
* Few chopped cilantro or coriander leaves
* Salt- as per your taste
* Oil for deep frying
For Sambar :-
* Toor dal - 1 cup
* Lauki or bottle gourd & beans(cut into small pieces) - 3/4 cup
* Sliced onion - 1 big
* Chopped tomatoes - 2 small
* Tamarind - 50 gms
* Mustard seeds - 1/4 tbsp
* Cumin - 1/4 tbsp
* Few leaves chopped cilantro or coriander
* Salt as per your need
* Dry red chili - 3-4
* Turmeric powder - 1/4 tsp
* Oil - 3 tbsp
* Few curry leaves
* Sambar powder - 2 tbsp
* Water - 2 cups
Method :-
For Vadas :-
* Soak urad dal in water overnight
* Drain off the excess water
* Add ginger & grind it in a grinder without using water or with just a sprinkle of water
* Use small portions of dal to grind as it is easier to make soft paste
* Mix salt,coriander & green chili into dal
* Mix the batter till it becomes fluffy
* Heat oil in a pan
* Wet your palm & take small portion of mixture on it,make a hole in the center to get desired shape.
* Carefully drop it from your palm into the pan & fry it to the golden color.
For Sambar :-
* Soak tamarind in a bowl of water for 30 min & extract juice from it,keep aside
* Boil dal by adding vegetables,salt & turmeric into it
* Heat oil in a pan
* Add mustard seeds & cumin,now add curry leaves & dry red chili
* Add onion into it,toss onion till it gets light pink color
* Now add tomato into it & cook until tomato mashes
* Add sambar powder,salt & tamarind juice into it
* Now add mashed dal into it & add water
* Cook for 3-4 min more on medium flame
For Serving :-
* In a serving bowl pour sambar arrange the vadas now pour more sambar on the top of vadas & keep it for 4-5 min for vadas to soak sambar
* Garnish it with chopped coriander
