Vegetable Spring Rolls


 Spring rolls are an easy to make starter,which can be made in advance too & kept frozen.You can use  anything you'd like as a filling for spring rolls.It is crunchy & tastes great when served with schezwan sauce.

Ingredients:-
* 10 Spring roll wrappers (available at any super market)
* 1 Onion (Sliced)
* 2 Spring onion (green part chopped)
* 2 Carrots (cut into thin strips)
* 1 Green capsicum (sliced)
* 1/2 Cabbage (finely shredded)
* Oil for deep frying
* Salt to taste
* 1/4 tsp white pepper powder
* 1 tbsp soy sauce
* 1 tbsp cornflour or corn starch

Method:-
For Stuffing:-
* Heat 2 tbsp oil in a non-stick pan.
* Add cabbage,onion,carrots & capsicum.
* Add salt,pepper powder,spring onion green & soy sauce & toss.
* Cook the vegetables till it gets bit soften.
* Off the gas & allow it to get cool.

For Rolls:-
* Make a paste of cornflour with 2 tbsp water.
* Heat sufficient oil in a pan.
* Spread the spring roll wrap on the work top.
* Place little filling on one side of the wrap.


* Apply a little corn flour paste along the edges of the wrap.
* Fold the top edge over the mixture to seal it firmly.


* Fold the left & right side of the sheet.



* Roll the sheet downwards tightly.
* Apply cornflour paste to open end & seal.
* Repeat with the remaining ingredients to make more rolls.



* Deep fry them,till they turn golden brown in color.
* Drain on absorbent paper.
* Cut into pieces & serve.

Note:-
* Take out the spring roll wrappers from the freezer before 30 min of use.
* Take a clean damp cloth & cover the wrappers to avoid them from getting dry.
