Ingredients:-
For batter:-
11/2 cup Maida
1/2 tsp Baking soda
1/2 tsp saffron or yellow food color
Water as neededGhee for frying
For syrup:-
2 cups Sugar
2 cups water
1 tbsp milk
2 cups water
1 tbsp milk
1/2 tsp Green cardamom powder
Pinch of saffron strands
Method:-
1.Take maida and baking soda in a bowl.
2.Add water and beat to make a smooth batter.
3.Cover the bowl and keep it overnight for fermentation.
4.Add food color to the batter.
For making jalebi:-
1.Heat ghee in a pan.
2.Pour some batter into a squeeze bottle.
3.When oil is ready squeeze the batter into ghee in spiral shape.
4.Start from outside to inside for better result.
5.Fry jalebi until golden and crisp on both sides.
For sugar syrup:-
1.Cook sugar with water in a pan,stirring continuously till the sugar dissolves.
2.Add milk and collect the scum which comes to the surface.
3.Add cardamom powder and saffron strands.
4.Cook syrup till it attains one string consistency.
5.Let the syrup cool a little bit or u can say warm.
6.Now soak the jalebi in this syrup for 2 or 3 minutes.
7.Drain and serve hot or cold.
