Dahi Vada


Dahi Vada is a very popular dish in North India.These are great for formal dinners or when served as a chat.

Ingredients :-

For Vadas :-
Udad dal - 1 cup
Ginger - 1 inch piece
Green chili - 1
Salt - to taste
Oil - for deep frying

For Garnishing :-
Curd or Yogurt - 2 cups
Roasted cumin powder - 1/2 tsp
Red chili powder - 1/2 tsp
Salt - to taste
Few chopped cilantro or coriander leaves

Method :-
* Soak udad dal for at least 6 hours or overnight
* Drain off all the water,add green chili & ginger into dal & blend it by using enough water as needed to blend
* Add salt & whip the batter with a spoon to make it light & fluffy
* Heat oil & deep fry vadas till golden brown at medium flame
* Soak them in water for 1- 1 1/2 hours
* Take curd,add salt to it & mix until smooth,use some water as needed to make it pouring consistency
* Remove the vadas from water bowl & gently press them between your palms to squeeze out excess water
* Place the vadas in a serving bowl & pour the curd evenly all over the vadas covering them completely
* Just before serving garnish it with roasted cumin powder,red chili powder,chopped coriander leaves & finish off with a drizzle of tamarind chutney


Tip :-
How to check dal - take a bowl of water & put a very small portion of dal batter,if it floats it means your batter is ready to make vadas otherwise beat the batter for little more
